Know Your Foods

Good Food Comes from a Local Farm.

Modern food production and processing practices are causing a myriad of health problems and most people don't even know it.  If you aren't deeply concerned about what you are eating today you need to be.  This article will discuss a few of the most important things you need to consider when choosing your food supply and provide some suggestions to mitigate those concerns.

If you desire a healthy life for yourself and your family, you need to take control of your food supply.  And you can't do that if you limit yourself to the local grocery store for your food. You need to know your farmer and foods.

100% Grass-fed Beef Is Healthier Than Grain-fed Beef.

The best choice of beef is 100% grass-fed beef, which is grass-fed and grass-finished. The cows are born and grow up in the grassland. In spring, summer, and fall, they graze all the time. In winter, they eat hay. The 100% grass-fed beef means only grass and hay, no corn, no soybean, no animal byproducts, no grain feeding, no hormones and antibiotics, and no crowded feedlots.

Why do you want this type of beef? What are the benefits?

  • Humane reason. 100% grass fed cattle spend their lifetime on good pasture, eating the right food, being together and living with other cows. They are healthy, happy and peaceful.

  • Health benefits. 100% grass fed beef is delicious and beautiful, with deep red color and small snow-white marbling. They are

    • lower in total fat,

    • higher in beta-carotene,

    • higher in vitamin E,

    • higher in vitamin B group, thiamine (B1) and riboflavin (B2),

    • higher in minerals including calcium, magnesium, and potassium,

    • higher in total Omega-3s,

    • healthier in the ratio of omega-6 to omega-3 fatty acids (1.65 : 4.84),

    • higher in conjugated linoleic acid (CLA), potentially improving immune system and body weight management, reducing the risk of heart disease, cancer, diabetes, and hyperthyroidism.

  • Environmental reason. For sustainable farming, rich soil is one of the most important elements for a healthy ecosystem. It is the foundation for healthy food. Grass is the rescue for damaged soil. Pairing cows with farmland will change soil to be healthy. Cows are naturally designed to eat grass. They

    • cut the grass and release seeds to stimulate the grass growth;

    • release fertilizer, cow manure, to grassland;

    • help reduce soil erosion because grass naturally regrows ---- no need for tillage;

    • help the soil be healthy and keep carbon dioxide underground;

    • finally change grass into milk and meat for us to consume.

Fermented Foods Are Medicinal.

Hippocrates, the father of medicine, claimed that “Food Is Medicine”. Now more and more people are agreeing with this ancient wisdom. They understand that one important foundation of being healthy is eating real food with real nutrition. Fermented foods are part of this. Well-prepared, real foods can be used as medicine.

Fermented foods are a vehicle carrying a large number of micro-organisms. It contains about 10^6 to 10^9 live, beneficial bacteria in every gram or milliliter. That means a very small bite of fermented food contains a huge number of live cells. Some studies have demonstrated that a large fraction of these microbes survive the travel to the gut lumen. They increase the number of microbes by up to 10,000-fold. Consuming "living" fermented foods introduces new intestinal microbes.

Many studies have confirmed that fermented foods are good for the whole health. They

  • improve weight maintenance;

  • reduce the risk cardiovascular disease and type 2 diabetes;

  • improve glucose metabolism;

  • improve lactose intolerance;

  • alter mood and brain activity.

Fermented foods can promote gut health including the incident, duration, and severity of some gastric intestinal illness, such as

  • viral infection of the digestive tract,

  • Traveler’s diarrhea,

  • Irritable bowel syndrome (IBS),

  • lactose intolerance,

  • intractable Pediatric diarrhea,

  • pseudo-membranous colitis.

Apart from digestive problems, fermented foods also benefit human immunity. Today, more scientists believe that our digestive tract is a part of immune system. Adding fermented foods into our diet can deliver beneficial bacteria to the gut, help fix the damaged gut walls, and rebuild healthy gut flora. It will be helpful for autoimmune disorders or behavioral disorders, such as

  • rheumatoid arthritis,

  • thyroid dysfunction,

  • autism,

  • depression,

  • addictions,

  • schizophrenia.
